"There are Vietnamese restaurants that provide similar items but there is not a standalone sandwich shop. And there is Bar Gernika, but that is a sit-down restaurant and not our vibe. We are very focused on street food, taking it old school with a modern twist. So I feel like with our niche and the location we're going in, it will draw in a different crowd of people, maybe people who are not familiar with our food and want to try it."
