Ingredients

  • ¾ cup cassava (100% yuca root) flour

  • 1 ½ teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup canned unsweetened coconut milk

  • ¼ cup water

  • 1 egg

  • 2 tablespoon pure maple syrup

  • 1 tablespoon olive oil

Directions

  1. In a medium bowl whisk together flour, baking powder, and salt. In a small bowl whisk together coconut milk, water, egg, maple syrup, and oil. Add to flour mixture. Stir just until combined.

  2. For each pancake, spoon about 1/4 cup batter onto a hot, lightly oiled griddle. Spread batter if necessary. Cook over medium 2 to 3 minutes per side or until pancakes are golden brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm. Serve with additional maple syrup.
