Frittatas are a delicious breakfast option that's easy to make and customize, but aren't always large enough to feed a crowd. Enter this oversized frittata. It is baked in a sheet pan so everyone will get a slice of this spicy Mexican frittata that's filled with chorizo, black beans, peppers, and poblano chiles.

Tips for Cooking with Chile Peppers

Chile peppers contain oils that can irritate your skin and eyes. Wear disposable food-grade gloves (latex or nitrile) while handling them. Don't touch your face, eyes, mouth, or nose to prevent burns. Contrary to popular belief, the hottest parts of a chile pepper are not the seeds but the pith (the white membrane on which the seeds sit) and the inner ribs. Remove those in addition to the seeds if you want the dish to be less spicy.

Ingredients

  • Nonstick cooking spray

  • 8 ounce uncooked chorizo or bulk pork sausage

  • 1 fresh poblano chile pepper, seeded and chopped

  • ½ cup chopped onion

  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained

  • ½ (12-ounce) jar roasted red sweet peppers, drained and chopped

  • 18 eggs

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¾ cup shredded Mexican cheese blend or cheddar cheese (3 oz.)

  • 2 tablespoon chopped fresh cilantro

  • Toppers, such as chopped tomatoes, sliced avocado, and/or fried tortilla strips (optional)

Directions

  1. Preheat the Oven

    Preheat oven to 450°F. Generously coat a 15x10-inch baking pan with cooking spray.

  2. Fry the Chorizo

    In a 10-inch skillet cook sausage, poblano pepper, and onion over medium heat until sausage is browned; drain off fat. Stir in black beans and roasted peppers. Spread mixture into prepared pan.

  3. Bake the Frittata

    In a large bowl whisk together eggs, salt, and black pepper. Stir in cheese and cilantro. Pour egg mixture over sausage mixture. Bake 10 to 12 minutes or until set. If desired, top servings with toppers and additional cheese and/or cilantro.
