Tips for Cooking Sweet Potatoes

Here are a few tips for cooking sweet potatoes to make fritters, fries, or soups.

  • Soak sweet potatoes before cooking. This will remove their starch, helping them develop a crispy texture instead of coming out soggy. Simply soak them in cold water for 30 minutes before moving them to heat.
  • Don't rush the process. The longer that it takes to cook a sweet potato, the sweeter it will taste when you're finished. However, if you don't want it to taste as sweet, you should cut it into tiny pieces, then cook it on high heat so the process is faster.
  • Keep the skin on. Unlike other veggies, you don't have to remove the skin from sweet potatoes. They are rich in vitamins, so keeping the skin on will give you the most nutrition and add a nice texture to the sweet potato.

  • 1 pound sweet potatoes, peeled and cut into 1/2-inch pieces (2 1/2 cups)

  • 1 egg

  • ¼ cup packed brown sugar

  • 2 tablespoon butter

  • 1 cup all-purpose flour

  • cup fine dry bread crumbs

  • 2 teaspoon baking powder

  • ¼ teaspoon salt

  • Vegetable oil for deep-fat frying

  • 1 6 ounce carton plain low-fat yogurt

  • 1 tablespoon snipped fresh chives

  • 1 clove garlic, minced

  • salt

  • ground black pepper

Directions

  1. Cook Potatoes and Combine With Other Ingredients

    In a covered large saucepan cook sweet potatoes in enough boiling water to cover for 12 to 15 minutes or until very tender. Drain and cool slightly. In a food processor combine sweet potatoes, egg, brown sugar, and butter. Cover and process until smooth. In small bowl stir together flour, bread crumbs, baking powder, and salt. Add flour mixture to sweet potato mixture. Cover and process just until combined.

  2. Fry Each Fritter

    In a deep-fat fryer or large heavy saucepan heat 1 inch oil to 350°F. For each fritter, drop 1 tablespoon of batter into hot oil. Fry, a few at a time, about 2 minutes or until fritters are golden, turning once. Remove with a slotted spoon and drain on paper towels. Serve warm with Yogurt-Chive Dipping Sauce.
