Heirloom Tomato and Egg Toasts
Ingredients

1 tablespoon mayonnaise

1 tablespoon coarse-ground Dijon-style mustard

1 teaspoon honey

4 slices whole grain bread

½ cup shredded mozzarella or Swiss cheese (2 oz.)

4 - 8 heirloom tomato slices

4 hard-boiled eggs, sliced

2 tablespoon chopped fresh basil

1 tablespoon balsamic glaze (optional)

Cracked black pepper (optional)
Directions

Preheat broiler. In a small bowl combine mayonnaise, mustard, and honey. Spread bread slices with mayonnaise mixture and top with cheese.

Place bread slices on a baking sheet. Broil 3 to 4 inches from heat 2 to 4 minutes or until cheese is melted and bread is toasted. Top with tomato slices, eggs, and basil. If you like, drizzle with balsamic glaze and sprinkle with pepper.
