Ingredients

  • 1 tablespoon mayonnaise

  • 1 tablespoon coarse-ground Dijon-style mustard

  • 1 teaspoon honey

  • 4 slices whole grain bread

  • ½ cup shredded mozzarella or Swiss cheese (2 oz.)

  • 4 - 8 heirloom tomato slices

  • 4 hard-boiled eggs, sliced

  • 2 tablespoon chopped fresh basil

  • 1 tablespoon balsamic glaze (optional)

  • Cracked black pepper (optional)

Directions

  1. Preheat broiler. In a small bowl combine mayonnaise, mustard, and honey. Spread bread slices with mayonnaise mixture and top with cheese.

  2. Place bread slices on a baking sheet. Broil 3 to 4 inches from heat 2 to 4 minutes or until cheese is melted and bread is toasted. Top with tomato slices, eggs, and basil. If you like, drizzle with balsamic glaze and sprinkle with pepper.
