Grilled Cheese Sandwiches
Ingredients

8 slices white or whole wheat bread

2 tablespoon butter, softened

2 tablespoon Dijon-style mustard

4 ounce slices American or cheddar cheese and/or mozzarella or provolone cheese
Directions

Lightly spread one side of bread slices with butter. Spread other side of bread slices with mustard. Top the mustard sides of four of the bread slices with cheese. Top with the remaining four bread slices, mustard sides down.

Preheat a large skillet over medium heat. Place the sandwiches in the skillet. If using a covered grill, close lid. Grill sandwiches until bread is golden and cheese is melted, turning once halfway through cooking.
Grilled Veggie-Cheese Sandwiches:
Prepare as directed, except, if desired, substitute bottled ranch salad dressing for the mustard. Layer 1/2 cup sliced cucumber, 1/2 cup sliced roma tomato, and 1/4 cup sliced red onion on the cheese before topping with the remaining bread slices.
